Here’s the latest recipe from the Bella Moda kitchen. Now mind you, our recipes are not always exact measurements nor do they have to be very strict to the ingredients. You can play around with it and put other things you like in it. It’s about healthiness, flavor and low fat!
Easy spring cold cucumber soup: (serves up to 4)
Ingredients:
Cucumber, garlic, green onion, mint, cilantro, skim milk, broth(vegetable preferrably) and low fat cream cheese.
Put in a blender, cut up cucumber, whole garlic clove, cut into a few pieces a green onion, cilantro stem diced, about 1 cup of broth (we use vegetable stalks, all leftover pieces etc from veggies to make a broth with before those veggies are added to compost). Also, add 1 cup skim milk and about 3 tblespoons low fat cream cheese, salt and pepper.
Mix in blender until well blended…
Pour in bowls and serve, a delicious and light spring/summer appetizer!
Nutritional facts of cucumbers:
Known to be good for skin (and eye puffiness: you can even blend up a little cucumber and freeze to put under eyes). Also, good source of fiber and water. And they say it is good for blood pressure.
Peppermint is known to be good for the breath, as well as a tummy soother. Also, it is another one known for cancer fighting benefits.
