Bella Moda's recipes for healthier living…

At my house, we love food but also like to maintain a healthy eating lifestyle (as well as fitness). We cook with almost all low fat ingredients, as well as the freshest(we do most shopping at the farmer’s market) and make absolutely delicious meals. We tend to do low carb at night(except for the wine or beer), and always finish with a delicious low fat, but delectable dessert.

We have decided to share with you, some of our favorite recipes!

This week: Low-Fat broccoli cheese soup with kale(Serves 2-4)

Ingred: Broccoli, Kale, Tomatoes, Herbs, Garlic, Onion, Low Fat Cream Cheese, 2% skim milk cheese slices, skim milk and salt and pepper.

Take a small broccoli floret. Cut the bottom off, then cut top of florets off very finely, so you have small pieces. Take all the excess stalk and bottoms of florets and put to side. Take about 1/4 cup of raw Kale and chop very finely. Also, dice about 3-4 grape tomatoes.

Take all stalk pieces and put in a blender. Add 3 cups broth, about 1/2-3/4 cup low fat cream cheese and 1/4-1/2 skim milk(depending on how thin you want it). Also, add a clove of garlic, a couple of chunks of onion and fresh herbs(such as cilantro and parsley. Then Salt and pepper. Blend until well chopped.

Pour mixture in a pan and heat at medium, adding kale, broccoli florets and grape tomatoes. Add up to 2 slices of 2% cheese slices as well and season to taste. I like to add a few drops of Texas Pete to add spiciness. Bring to a boil, then simmer for about 20 minutes to thicken.

Tomatoes, cheese, onions, garlic and herbs are all very nutritious as well… eating some of each of those as much as possible is very healthy!

Tomatoes are extremely high in Vitamin C as well as lycopene, which prevents cancer and heart disease.

Onions and garlic are great for the immune system, as well as have many cancer fighting agents. Also, onions are great to lower blood sugar and glucose…an anti inflammatory and more.

Parsley has anti oxidants, is good for the heart, and arthritis…and other herbs are very nutritious and high in fiber etc…

And as we know cheese is delicious, stick with the low fat cheeses…they are high in calcium, tryptophan(which helps sleep-so eat a couple slices at night with apple slices)…also high in protein.
